Saying the supply of cryptocurriencies can only go up is like saying the supply of fiat currencies can only go up – it says nothing of individual fiat currencies (e.g. US dollar, Great Britain Pound, Japanese Yen) or individual cryptocurriencies (Bitcoin, Ethereum, etc).
